WILMINGTON, NC (WECT) - Don’t forget your grill this time of year. It’s a great place to sneak away for a quick and easy dinner while your oven and stove are working overtime baking those holiday treats.
Here’s a recipe for a shrimp boil WITHOUT the boil, that I found online and found it delicious.
2 cloves garlic, minced
1lb of deveined shrimp
2 smoked Andouille sausages, thinly sliced
2 ears corn, each cut crosswise into 4 pieces
1 lb. red bliss potatoes, chopped into 1-in pieces
2 tbsp. extra-virgin olive oil
1 tbsp. Old Bay seasoning
1 lemon, sliced into thin wedges
4 tbsp. butter
Freshly ground black pepper
2 tbsp. chopped fresh parsley leaves
Simple ingredients, count to three, and your done with little cleanup. It doesn’t get much better than that. Enjoy your weekend.
