1 qt. heavy cream (scald 1/2 with vanilla bean)
1/2 lb. sugar (1 cup sugar)
1 vanilla bean - or 1/2 tbl. vanilla extract
10-11 egg yolks (1/4 qt. past. yolks)
1/2 qt. heat (heavy cream) add vanilla bean
other 1/2 of heavy cream add eggs,
mix together slowly or you get scrambled eggs
cook in warm water bath, cook 1 hour (don't overcook), should have a little ziggle the size of a dime.
