Cut slits in the chicken breasts to make pockets. Stuff each pocket with 2 oz. cheese. Use a toothpick to hold pocket closed. Brown breast in olive oil on both sides, remove from pan, place on baking sheet. In a small saucepan combine the butter, hot sauce, and the vinegar until smooth. Drizzle 1/2 sauce over chicken. Bake in 350º oven for 20 minutes. Remove toothpicks and serve with remaining sauce.
