Susie's Spicy Chicken

  • 6 ea. chicken breast, boneless & skinless
  • 12 oz. blue cheese crumbles
  • salt & pepper
  • 1 1/2 stick butter
  • 4 tbsp. cholula hot sauce
  • 3 tbsp. white vinegar

Cut slits in the chicken breasts to make pockets.  Stuff each pocket with 2 oz. cheese.  Use a toothpick to hold pocket closed.  Brown breast in olive oil on both sides, remove from pan, place on baking sheet.  In a small saucepan combine the butter, hot sauce, and the vinegar until smooth.  Drizzle 1/2 sauce over chicken.  Bake in 350º oven for 20 minutes.  Remove toothpicks and serve with remaining sauce.
