Greek Flounder

Greek Flounder

Makes 4 portions

Four 10 oz. flounder filets

2 oz. chopped onions

2 oz. chopped green pepper

2 oz. chopped green olives

2 oz. chopped spinach cooked

1 tablespoon chopped garlic

2 oz. feta cheese, crumbled butter, salt and pepper


1. mix all ingredients together

2. cut flounder in the center and spread apart

3. butter a baking pan or cookie sheet

4. place flounder on pan, stuff center of each flounder

5. brush entire flounder with butter

6. season with salt and pepper

7. broil 6-8 minutes or until golden brown
