Grilled Tilapia en Paupiette

  • 6 each 6 oz. tilapia fillets
  • 1 C grape tomatoes
  • 1 C diced squash
  • 1 C sliced red onion
  • 1 C sliced sweet peppers
  • 1/2 C sliced black olives
  • 1 tbsp. capers
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 2 tbsp. chopped fresh oregano
  • salt and pepper

Combine vegetables, herbs, oil, salt and pepper: blend well.  Cut 6 pieces parchment or foil in 20 inch squares.  Spray with food release.  Place fillet in middle and top with vegetable mixture.

Seal each packet and place on med-hot grill fro about 5 minutes.  Serve with your favorite rice.
