Jorgie's Tortilla Shrimp

  • 2 C bread crumbs
  • 3 C crushed tortilla chips
  • 2 tbsp. smoked paprika
  • 2 tbsp. sea salt
  • 2 tbsp. minced garlic
  • 2 tbsp. cracked pepper
  • 1 tsp. cayenne
  • 1 tbsp. dried thyme leaves
  • 2 C flour
  • 4 eggs, whipped
  • 16-24 large shrimp, peeled and deveined
  • canola oil, as needed

Combine the first 8 ingredients until well blended.  Set up 3 pans: put flour in the first, whipped eggs in the second, and the tortilla mixture in the third.  Heat 2" of oil in a deep skilled to 350º.  Dredge the shrimp in the flour, then the eggs and in the tortilla mixture.  Fry in hot oil until golden brown.  Serve with your favorite salsa and guacamole.
