Stuffed Beef Tenderloin

  • 1 beef tenderloin, trimmed & butterflied
  • 3 tbsp. garlic butter
  • 1 C mushroom, chopped
  • 1/2 C chopped shallots
  • 1/2 C pesto

Lay out the beef and spread the butter and the pesto evenly.  Top with the mushrooms and the shallots.  Roll up like a cinnamon roll.  Tie with butchers twine.

Roast in a 400º oven for 40 minutes for medium, rare.  Slice and enjoy.
