Grilled Chicken Falconero

  • 8 each chicken breast, boneless & skinless
  • 1/4 C olive oil
  • 3 onions, sliced
  • 6 bell peppers, three color, sliced
  • 3 C sliced baby bella mushrooms
  • 6 large tomatoes, diced
  • 2 tbsp. tomato paste
  • 8 cloves garlic, minced
  • 1 C basil leaf, minced
  • 1 C parsley leaf, minced

In a large saute skillet, saute the onions, peppers, and garlic until soft.  Add tomatoes and seasonings, let simmer for 20 minutes.

Season the chicken with salt and pepper, grill until done.  Top with tomato mixture.
