Winchester Pork Chops

  • 8 pork chops
  • 2 tbsp. Creole seasonings
  • 1/2 C canola oil
  • 3 Granny Smith apples, diced
  • 2 C onions, diced
  • 3 lbs. cabbage, diced
  • 2 C chicken stock
  • 1 C brandy
  • 2 bay leaves
  • S&P to taste
  • 1 tbsp. Italian puree

In a large skillet, heat the oil.  Season the chops and saute until done.  Remove chops.  Add the onion, apples, and cabbage.  Saute until soft.   Add the stock, seasonings, and brandy.  Reduce by 50%.

Spoon the apple mixture over the chops and enjoy.
