Cape Fear Chili

  • 3 lbs. beef sirloin, small cubes
  • 2 lbs. pork loin, small cubes
  • S&P to taste
  • 1/2 C Canola Oil
  • 2 lg. onions, diced
  • 10 garlic cloves, minced
  • 1/3 C ancho chili powder
  • 1 tbsp. gr. cumin
  • 1 tbsp. dried oregano
  • 1 15oz. can small dice tomatoes
  • 4 C chicken broth
  • 1 C bloody mary mix
  • 1 ea. 15oz. pinto beans, 15oz. kidney beans, washed and drained

In a large stock pot, heat the oil and saute the meat until done.  Drain off excess oil.  Add the onion and garlic, saute until onions are soft.  Add spices, broth, bloody mary mix, tomatoes, and beans.  Bring to boil, reduce heat, and let simmer for 40 to 45 minutes.
