Pork Chops de Meaux

  • 6 each 8-10 oz. pork chops
  • 2 tbsp. olive oil
  • salt and pepper

Rub the chops with oil and season.  Grill until done, 4-5 minutes on each side.

While the pork is grilling, in a small saucepan, make a roux with:

  • 3 tbsp. butter
  • 3 tbsp. AP flour

In a separate sauce pan, heat:

  • 3/4 C chicken broth
  • 1/4 C bourbon

Add the roux to broth to thicken, then add:

  • 1 1/2 tbsp. whole grain mustard
  • 6 tbsp. heavy cream

Let simmer for 2-3 minutes to thicken.  Pour over grilled pork chops and enjoy.
