Chicken Breast & Shrimp Milanaise

  • 6 each chicken breast, boneless
  • 24 each 21/25 shrimp, cleaned
  • 3 tbsp olive oil
  • salt and pepper

Coat the chicken and the shrimp with the oil, season, and grill until done.

While the chicken is cooking, make the sauce as follows:
In a medium sauce pan add;

  • 1 C chicken broth
  • 1 C chardonnay
  • 1/2 C tomato sauce
  • 2 cloves minced garlic
  • 1 shallot, minced

Bring to a slow boil.  Then add;

  • 1 C cream
  • 1 1/2 tbsp. Italian seasoning
  • 1 tbsp. Dijon mustard
  • 1/2 C grated parmesan

Bring back to a slow boil and thicken with roux. (equal parts of melted butter and AP flour mixed together).  Place 4 shrimp on top of each chicken breasts, then sauce and top with toasted chopped pine nuts.
