Havana Pork Chops

  • 6 each, 6 oz. pork chops
  • 1 C lime juice, split in 2 1/2 C portions
  • 1 1/2 C orange juice
  • 1/4 C cier vinegar

 

In a large Ziplock bag, combine 1/2 C lime joice, 3/4 C orange juice, and the vinegar.  Add the chops and let marinate for 2 hours.  Remove chops from marinade and pat dry.

  • 1 tbsp. black pepper
  • 2 tbsp. salt
  • 1 tbsp. cumin
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1/2 tsp. cocoa powder

Combine spices and rub all over the pork chops.

In a large skillet, heat 1/4 C canola oil, brown chops on both sides and remove from the pan.

Add:

  • 1/2 C shopped sweet onion
  • 2 cloves minced garlic

Sautee until soft, then add:

  • 1/4 C dark rum
  • 1/2 C lime juice
  • 3/4 C orange juice
  • 1 C chopped roma tomatoes
  • 1/4 C sugar

Let reduce by 50%, add chops and finish in a 400º oven for 12 to 15 minutes.  Add 4 oz. of butter to finish the sauce.
