El Paso Grilled Steak Salad

  • 2 lb. center cut beef tenderloin, trimmed
  • 3/4 C lime juice
  • 1/2 canola oil
  • 1/2 tsp. cayenne
  • 1 1/2 tsp. cumin
  • 2 clove garlic, minced
  • 1 tsp. chili powder
  • S&P to taste

Combine all above and let beef marinate for 6 to 8 hours.  Grill to desired doneness and set aside.

  • 4 ears of corn, grilled and removed from the cob
  • 1 C black beans, drained and rinsed
  • 3 heads romaine lettuce, chopped
  • 3 lg. beefsteak tomatoes, chopped
  • 1 red onion, chopped
  • 1 lg. bell pepper, chopped

Toss the lettuce, beans, corn, tomatoes, onions, and peppers together.  Slice the steak thinly and top the salad mixture.  Drizzle with olive oil, lime juice, and chopped cilantro.
