Grilled Pork Tenderloin with Mango Pineapple Relish

  • 3 or 4 pork tenderloins
  • 1/3 C Sherry, dry
  • 2/3 C soy sauce
  • 1/2 C water
  • 1/3 C brown sugar
  • 1/4 C rice wine vinegar
  • 3 garlic cloves, minced
  • 2" piece ginger root, peeled & minced

Combine the above ingredients, blend well.  Place pork in large Ziploc bags and cover the marinade.  Let marinate over night.

Remove from marinade and grill to desired doneness.  Top with relish and serve with jasmine rice.

 

RELISH

  • 2 C diced pineapple
  • 1 C diced mango
  • 1/2 C diced tri-color bell peppers
  • 1/2 C sweet onion, diced
  • 1 garlic clove, minced
  • dash of hot sauce
  • dash of white wine vinegar
  • S&P to taste
  • 2 tbsp. minced mint leaves

Combine all above and toss to mix.
