Chilean Sea Bass and other recipes

Mashed Potatoes (yields 4)

2tsp. Butter (Steak Butter- Garnish)

Sprinkle of Fresh Parsley

2lbs Potatoes

Approximately 2/3 cup Whole Milk

¾ teaspoon salt

½ teaspoon White Pepper

½ oz Roasted Garlic Puree

2.5 oz Salted Butter

Slice raw potatoes into 2 inch pieces.

Steam potatoes for 25 minutes until tender to fork

With a mixer, whip potatoes until all lumps are beaten out. (3-4 Minutes)

While potatoes are steaming, bring whole milk to 150 degrees F (do not boil)

Add Salt, Pepper, Garlic and Butter to potatoes (beating slowly)

Add Milk to Potato Mixture

Serve with Butter and Parsley sprinkled on top

Filet (yields 1)

12 oz Filet

¼ teaspoon Salt

¼ teaspoon Ground Pepper

1 tablespoon Butter

Sprinkle both sides of Filet with Salt and Pepper

Broil to desired temperature

Place butter on Filet

Sprinkle with Parsley

Chilean Sea Bass with Banana Curry Butter (yields 1)

Curry Banana Butter

3/4 Teaspoon Diced White Onions

.03 oz butter

.18 oz mashed bananas

.5 oz Butter

¾ Tablespoon Honey

Pinch Curry Powder

Pinch Salt

Pinch Ground White Pepper

Sauté onions on medium heat with .03 oz butter (Caramelize)

Mash Bananas into a paste

Place remaining butter, onions, and bananas into a mixing bowl and mix well

Mix honey, curry powder, salt, and white pepper into mixing bowl with butter mixture and mix well.

Store for later use

Fried Sweet Potatoes

Peel one sweet potato

Slice potato

Fry in skillet with 2 tablespoons butter

Blackened Potatoes

2 Potatoes

2 Tablespoons Butter

1 Teaspoon Salt

1 Tablespoon Pepper

Steam potatoes (25 minutes) or until tender to the fork.

Slice the potatoes  vertically to create strips

Fry potatoes using remaining butter and salt and pepper on stove top

Sea Bass

10 oz Chilean Sea Bass

½  Teaspoon Salt

½ Teaspoon Black Pepper

1 oz lemon water

2 Table Spoons Banana Curry Butter

Season both sides of Sea Bass with Salt and Pepper

Put in baking dish and pour lemon water over fish

Bake in 450 degree F oven for 12-15 minutes (or desired temperature)

Arrange potatoes flat on plate

Serve on plate on top of Potato arrangement
