Spicy Grilled Pork Chops

Brine

3 qts. water

12 cloves garlic, smashed

1/2 c kosher salt

1/4 c mixed peppercorns

1 c sugar

1 tsp pickling spice mix

2 bay leaves

12 to 16 3/4" pork chops

Combine all the ingredients, except the chops in a large sauce pan.  Bring to a boil, remove from the heat and cool completely.  Add the chops to brine and marinate for 3 to 4 days.

Spicy Rub

3/4 c brown sugar

2 1/2 tbsp ground cumin

1 tbsp salt

1/2 tsp cayenne

1 tsp cinnamon

2 tsp chili powder

Combine all above and set aside.  Remove chops from the brine and pat dry.  Evenly coat the chops with the spice and grill to desired doneness.
