Grilled Seafood Skewers

12 each flat bamboo skewers, soaked in water

1 c olive oil

1/2 c chardonnay

1/4 c lemon juice

2 tsp. minced garlic

1 tsp. minced Italian herbs

Let skewers soak in water over night.  Combine oil, wine, lemon juice, and herbs.

1 lb. catfish fillets in 1" cubes

1 lb. salmon fillets in 1" cubes

1 lb. diver scallops

2 lb. easy peel shrimp

Marinate the seafood in the oil mixture for at least 2 hours.  Skewer the seafood (shrimp, catfish, salmon, scallop) and grill over high heat for 2 to 3 minutes on each side.  Serve over rice or grits with grilled corn.
