Grilled Chicken Parmesan and Spinach Salad

6 ea. chicken breast, boneless and skinless

2-3 tbsp olive oil

salt and pepper to taste

1 c shaved parmesan cheese

1 1/2 c sliced button mushrooms

1 sm red onion, thinly sliced

6 sm roma tomatoes, coarsely chopped

12 c cleaned baby spinach

Coat the chicken with olive oil and salt and pepper.  Grill until done and slice.

On 6 plates, layer the spinach, mushrooms, tomatoes, onions, and chicken.  Top with the shaved cheese and dressing.


1/4 C whole grain mustard

2 tbsp white balsamic vinegar

3 tbsp chicken stock

1 tbsp lemon juice

3 tbsp olive oil

Combine all above and whisk until thick.
