James Island Chicken Breasts

  • 6 each boneless, skinless chicken breasts
  • olive oil
  • salt and pepper to taste

Coat chicken with oil, season, and then grill until done.

  • 1 stick butter
  • 4 cloves minced garlic
  • 1 pt. sliced mushrooms
  • 1 pt. grape tomatoes, halved
  • 6 tbsp. white balsamic vinegar
  • 1 c white wine
  • 1 c marinated artichoke hearts, quartered
  • 1 c balsamic cipollina onions

Saute garlic in butter for 2 to 3 minutes.  Add the mushrooms and tomatoes.  Cook until mushrooms are soft.  Add the rest of the ingredients and cook for 4 to 5 minutes.  Spoon over grilled chicken breasts and enjoy.
