Blackened Tilapia With Whiskey BBQ Sauce

  • 6 each tilapia fillets
  • 2 sticks butter, melted
  • 1 c blackening spice mix

Heat a cast iron skillet for about 10 minutes.  Melt the butter in the skillet and then pour off into a large bowl.  Dip the fillets into the butter and coat with the spice mix.  Cook on each side for about 2 to 3 minutes.

Serve over rice, pasta, or grits with the BBQ sauce recipe that follows.

  • 1/4 lb diced bacon
  • 1 c bell pepper, diced
  • 1/2 c dice sweet onion
  • 6 tbsp whiskey
  • 1/2 c brown sugar
  • 14 oz. ketchup
  • salt and pepper to taste

Cook the bacon until it is done.  Add the onion and the peppers.  Cook until the onions are transparent.  Add the whiskey, sugar, and ketchup.  Let simmer for 10 to 15 minutes.  Cool completely.
