Grilled Pork Chops with Bourbon Cream

  • 6 each boneless center cut pork chops
  • olive oil
  • salt and pepper to taste

Coat chops with olive oil, season and grill to desired doneness.

  • 2 tbsp. butter
  • 1 c chopped bacon
  • 1/4 c bourbon
  • 1/2 c chicken broth
  • 1/2 c heavy cream
  • 1 tbsp. whole grain mustard
  • 2 tbsp. roux

Saute bacon in the butter until cooked.  Pour off excess grease.  Slowly add the bourbon, reduce by 50%.  Add the broth and cream.  Bring to a slow boil and thicken with the roux.  Add the mustard and blend well.  Spoon over the chops and enjoy.
