Grilled Strip Steaks With Mushroom Salsa

  • 6 strip steaks, 10 to 12 oz. each
  • olive oil
  • salt and pepper to taste

Coat steaks with oil, season, and grill until desired doneness.

  • 1 lg sweet onion, diced
  • 1 c sliced white mushrooms
  • 1 c sliced baby bella mushrooms
  • 1 c blanched, sliced asparagus tips
  • 1 pt. grape tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • 2 tbsp. red wine vinegar

Saute the onions and the garlic in the olive oil until transparent.  Add the rest of the ingredients and cook for 3 to 4 minutes.  Spoon over the steaks and enjoy.
