Country Captain Chicken

6-8 chicken breasts

1-2 small onions, diced

2 green peppers, diced

2 cloves garlic, minced

salt and pepper to taste

2 tsp. curry powder

2 each 16 oz. cans chopped tomatoes

1 tsp. chopped parsley

1/2 tsp. powdered thyme

3 large tbsp. currants

1/4 lb. toasted almond slivers

2 cups cooked rice

Grill chicken until done.  Saute' onions, garlic, peppers until soft.  Place chicken in a roasting dish and cover with saute'ed vegetables, add tomatoes, spices, and bake in a preheated oven for 25-30 minutes.  Serve over cooked rice.  Ad currants to sauce and top with almonds.
