Grilled Tuna With Citrus Salsa

zest of 1 lemon

2 red grape fruits, diced

2 oranges, diced

2 limes, diced

2 lemons, diced

1 ea. red, green, yellow bell pepper, roasted and diced

1 bu. green onions, chopped fine

1 c orange juice

1 lg. red onion, chopped

1 1/2 c light syrup

1 c white wine vinegar

3 diced jalepeño peppers

6 tuna fillets

s&p to taste

Season the tuna and grill until done.

In a sauce pan, heat the orange juice, corn syrup, red onion, and vinegar.  Reduce by 50%, let cool.

In a large bowl, toss the fruit peppers, green onion, zest, and reduction well.  Top the tuna with the salsa and enjoy.
