Champagne Chicken

1T clarified butter

1   chicken breast split cleaned and pounded


1/4 cup mushrooms

Splash champagne

1/2 cup heavy cream

Pinch salt and pepper

1/4 cup lump crab meat

4 strips of roasted pepper

Place butter in saute pan and heat. Place floured chicken in pan and cook through turning in pan.

Add mushrooms and champagne.

Add cream, seasoning, crab meat, and peppers.

Reduce to creamy consistency.

Serve hot.
