NY Strip Steak with Eggplant Relish

12 oz strip steaks

1/2 cup fresh chopped rosemary

3 T minced garlic

1/2 cup sea salt

1/3 cup course ground black pepper

Rub down steaks with oil and spice mixture. Grill until done to your liking.

2 large eggplants, diced

1 red onion, diced

1/3 cup canola oil

salt and pepper to taste

Toss vegetables in oil and seasoning. Roast in a pre-heated oven at 425 degrees until tender.

1 T minced garlic

1/2 cup balsamic vinegar

1/2 cup olive oil

2 T chopped parsley

Mix the above ingredients and toss with roasted vegetables. Top steaks with eggplant relish and enjoy!
