2 to 3 lbs of sweet potatoes, washed
2 large eggs, whipped
1/2 stick of butter
1 t of salt
2 T of brown sugar
1 T Chopped orange zest
1/2 t cinnamon
1/2 t ginger
Pinch of nutmeg
Pinch of white pepper
1/3 cup chopped pecans
Bake the sweet potatoes in a 400 degree over for 60 minutes or until done.
Scoop meat out of the potato and place in mixing bowl.
Combine all the ingredients and blend until smooth.
Butter an 8" square casserole dish, pour in mixture and bake in a 350 degree over for 30 to 40 minutes, or until puffy.
