Cheddar and Garlic Mashed Potatoes

2 to 3 lbs potatoes , peeled and diced

1 stick of butter, cubed

2 heads roasted garlic, minced

1/3 cup sour cream

1/3 to 1/2 cups of heavy cream

1/2 cup grated sharp cheddar cheese

1/3 cup scallions, green part only, chopped

salt and pepper to taste

Pinch of ground white pepper

Pinch nutmeg

Boil potatoes in salted water until soft which should be about 20-25minutes.

Drain well and place potatoes in a large mixing bowl.

Start beating with mixer and add in the following order, butter, sour cream, cream, cheese, scallions and spices.

Whip until desired texture and creaminess is achieved.
