Mary Anne’s Vegan Morning Glory Muffins

This recipe has no eggs and no oil. Therefore, there is no cholesterol or added fat in this recipe. The only fat is naturally occurring in the nuts and coconut. Fruits are added for sweetness and whole wheat flour, nuts and dried fruits are added for fiber and nutrients.

Yield: 24 muffins

1 cup cherries

2 cup whole wheat flour

½ cup brown sugar or agave

4 tsp baking soda

4 tsp cinnamon

1 tsp salt

2 tbsp. fresh grated ginger

2 medium granny smith apples peeled cored and grated

4 cups grated carrots (almost bag of carrots)

1 cup sweetened coconut

1 cup chopped walnuts

2/3 cup sunflower seeds

1 1/3 cups apple sauce

½ cup orange juice

4 tsp. vanilla extract

Grate the apple and carrots. Whisk together dry ingredients. Beat together the applesauce, juice, and vanilla. Mix everything together until evenly moistened. It makes a thick batter. Spoon the mixture into muffin tin, until all are almost full. Bake at 375˚F for 25-28 minutes.
