Southwest Snow Crab Party Platter

- 2 lbs. individual Alaskan Snow Crab legs
- Tortilla chips
- 1 cup orange juice
- 1/2 cup lime juice
- 2 tsp. chopped garlic
- 3 tsp. chopped cilantro
- 1 tsp. ground cayenne pepper
- 1 bottle Mexican beer
- 2 cups water
- Southwest spice
In a large pot, add 2 cups water. Next, add snow crab legs. Once the water begins to boil, add 1/2 bottle of the beer and 2 tbs. Southwest spice over crab legs, then cover.
Stir mixture once halfway through cooking. Cook on high for 3-4 minutes until steaming hot. While the crab legs are steaming, make your cilantro citrus dipping sauce.
To make sauce, whisk together orange juice, lime juice, red wine vinegar, garlic, chopped cilantro, and cayenne pepper. At this point, the crab legs should be done. Remove lid.
Arrange the party platter by having a bowl of salsa in the center and warm tortilla chips around the salsa. Around the chips, place the Southwest crab legs. Garnish the platter with small cups of cilantro citrus dipping sauce.
