- 2 3/4" NY sirloin strip steaks
- 1/2 cup bleu cheese
- 3 cloves garlic, minced
- 1/4 tsp black pepper
- 1/4 tsp orange zest
- 2 tbsp cognac (or to taste)
In a small bowl, mix bleu cheese, garlic, black pepper and orange zest. Mix to a lumpy paste (thicker than peanut butter).
To thin the paste, add a small amount of cognac.
Heat grill to medium-high. Cook steaks on one side, turn and add paste to cooked side and let paste melt as second side cooks.
