Thrill of the Grill Contest finalist #3

  • 2 3/4" NY sirloin strip steaks
  • 1/2 cup bleu cheese
  • 3 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1/4 tsp orange zest
  • 2 tbsp cognac (or to taste)


In a small bowl, mix bleu cheese, garlic, black pepper and orange zest.  Mix to a lumpy paste (thicker than peanut butter).

To thin the paste, add a small amount of cognac.

Heat grill to medium-high.  Cook steaks on one side, turn and add paste to cooked side and let paste melt as second side cooks.

Remove and let rest for five minutes.  Sprinkle cognac over each steak and serve.
