Tequila Shrimp

Ingredients
1/2 lb large jumbo shrimp p/d, halved lengthwise
1/2 cup diced onions
1/2 cup diced tomato
1 avacado peeled, pitted, diced
2 tbs. minced garlic
2 limes, juiced
2 tbs. olive oil
1/4 cup tequila
1 tbs. cilantro
salt to taste
 
In a medium saute pan heat olive oil and add onions and garlic and cook until onions are translucent.  Next add shrimp and saute for 2-3 minutes.  Then add tequila and flame of the alcohol.  Last add lime juice, avacado,tomatoes, and cilantro and salt to taste.  Bring the dish together and serve over a bed of tortilla chips.  Servings 2.
