Scallion Ginger Vinaigrette


½ cup pickled ginger, with vinegar

¼ cup fresh ginger shredded

½ cup olive oil

2 cups scallions, chopped

Salt & pepper

Small handful of spinach leaves (optional)

Combine pickled ginger with the vinegar, fresh ginger, spinach, scallions, salt & pepper in a blender;

Turn on and slowly add oil;

Mix and serve;
