Rocket Salmon

4 salmon filets, about 8 oz.

1/2 cup flour

kosher salt and ground pepper

pinch of cayenne pepper

2 tbls. olive oil

1 bulb fennel with fronds

4 blood oranges, peeled

zest of 1 orange

1 tbls. sugar

1 tbls. rice wine vinegar

1/4 lb. fresh argula

In a small bowl, combine flour, salt pepper and cayenne. Dregde salmon in flour. Shake flour excess. Heat oil in 10" fry pan. Add salmon, cook for 4 min. turn and cook another 4 minutes. Place in bowl with sliced blood oranges and stir zest, sugar, olive oil. vinegar and chopped fennel fronds. Toss gently.
