• 1 large egg
  • 2 large egg yolks
  • 1-1 ½ cup oil (typically olive other oils will flavor the  mayonnaise accordingly)
  • ½ tablespoon white vinegar
  • ½ tablespoon Dijon Mustard
  • Salt and Pepper to taste

For Caesar dressing:

  • ½ cup Asiago Cheese
  • 1 glove garlic
  • 4 anchovies

Equipment needed:

  • Food processor

Blend the eggs in the food processor until it is a light lemon color. Add the oil in a thin stream, allowing the eggs to absorb the oil before adding more. Season with salt and pepper and add any optional ingredients.
