Parmesan Crusted Chicken


  • 1 cup             panko breadcrumbs
  • 1 cup              grated parmesan
  • 1 tsp              salt
  • 1 tsp              black pepper
  • 2                      eggs
  • 1 8oz              chicken breast pounded thin
  • 2 oz                vegetable oil
  • 2 cups            fresh garden vegetables

Preheat Teflon coated pan over stovetop on medium high heat. Add oil to coat bottom of pan.

Mix cheese, breading and seasoning on mixing bowl.

Crack eggs into bowl and beat. Coat chicken in egg and press into breading on both sides.

Place chicken in hot oil and cook til crumbs brown nicely, about 3 minutes. Turn chicken and repeat.

Place chicken on platter. Serve with fresh garden vegetables.
