2012 Salisbury Steak with Cream Corn

Breading

  • 1 cup organic rice crackers, pulverized in food processor
  • 1 tbl seasoning of your choice (surf salt, old bay, etc.)
  • 2 egg whites whipped
  • Fresh yellowfin tuna, cut into 6 oz. pieces

Dip tuna steaks into egg whites, then cover with rice cracker crumbs.

Sear in a hot pan for 2 minutes on each side

Creamed corn

  • 2 cups fresh corn kernels
  • 1 cup corn broth

Simmer all ingredients for ten minutes and puree
