Italian Chicken

2 tbls. bacon grease

3 lbs. chicken skinless pieces

2 onions, sliced

2 cloves garlic, minced

14 oz. can Tomatoes

8 oz. can Tomato paste

1 tsp. kosher salt

1/4 tsp. black pepper

1 tsp. basil

1/2 tsp. oregano

First remove the skin from your chicken pieces. Cut chicken into small pieces. Heat the bacon grease in a very large skillet. Add the chicken and fry in the fat until it begins to brown. Remove from the pan. Saute' onions and garlic in the same pan until they are tender. Add tomato products, seasonings and bring to a boil while stirring. Add chicken, cover skillet. Reduce heat to medium low and cover and let the pan simmer for about 45 minutes. Served with cooked noodles.
