Four 10-12 oz. center cut Ribeye steaks
Let the steaks rest at room temperature for 10-15 minutes
before grilling. Rub steaks with Cowboy Steak Rub and grill to desired
temperature.
While the steaks are cooking, mix the following:
1 small red onion, sliced
3 cloves garlic, minced
1 medium sweet bell pepper, sliced thin
6 green onions, chopped
¼ cup steak butter
2 tbsp. red wine vinegar
Melt butter in sauté' skillet, add vegetables and cook for
2-3 minutes, add vinegar and cook for 2 more minutes.
COWBOY STEAK BUTTER
1 lb. country butter, softened to room temperature
4 cloves garlic, minced
2 dash hot sauce
4 dash worchestershire sauce
½ tbsp. parsley, minced
1 tbsp. green onion, minced
Combine all above and mix well, roll in plastic wrap and
freeze.
Top steaks with vegetable mixture and a pat of cowboy
butter.
