Roasted Grouper with Tropical Relish

2 lb. Grouper Filet

1 cup mango

1 cup cubed mango

1 cup cubed pineapple

1 cup cubed papaya

1 cup cubed diced roasted red pepper

2 tbls. chopped cilantro

juice from one lime

2 tbls. olive oil

1 tbls. minced garlic

salt and pepper to taste

In a baking pan place 2 lb. grouper filet. Season filet with garlic, olive oil and salt with pepper. Preheat oven to 400 degrees. Place grouper in oven and roast for 15-20 minutes until done.

While grouper is roasting. prepare fruit relish by placing fresh mango, pineapple, papaya, roasted pepper, diced cilantro and lime juice in a large mixing bowl. Stir relish and let sit at room temperature until filet is done.

Grouper is best served over a bed of rice and topped with tropical fruit relish.
