Pacific Rim Skewered Scallops

1/4 cup lemon juice

1/2 cup olive oil

1/4 soy sauce

2 tbls. chopped parsley

1 medium scallop

6 oz. fresh mushroom

10 oz. chopped pineapple

bacon, precooked

wooden skewers

salt to taste

Combine olive oil, lemon juice, soy sauce, parsley and pour over scallops. Allow scallops to marinate at leas 1 hour. Next soak wooden skewers in water for 5 minutes. Next place pineapple, scallop, bacon, and mushroom in order until skewer is full.

Place skewer into a preheated medium iron skillet. Cook skewers on each side until done. Approx.. 10 minutes. Lightly salt to taste.
