Jamaican Red Snapper

1/4 cup diced scallions

2 tbs. minced garlic

2 tbs. jerk seasoning

1 tbs. lime zest

1 lb. Red Snapper filet

1/4 cup lemon juice

2 tbs. soy sauce

2 tbs. olive oil

Using a small mixing bowl, combine scallions, garlic, jerk seasoning, lime zest, lemon juice, and soy sauce. Place the snapper filet on a baking sheet and thoroughly coat fish with mixture.

Place fish in 350 degree oven for 20-25 minutes until cooked thoroughly. Baste fish with seasoning mixture every 8-10 minutes for flavor. Serve with rice and vegetables of your choice.
