Stuffed Shrimp

1lb jumbo shrimp (peeled and deveined)

1/4 cup finely diced onion

1/4 cup finely diced green pepper

1/4 cup finely diced celery

1 tbs. fresh garlic

1/2 cup bread crumbs

1 cup crab meat

cayenne pepper

salt to taste

olive oil

shredded Parmesan

melted butter

lemon wedges


Heat saute pan on medium heat with 1 tbs. olive oil.  When oil is hot add onions, celery, and green pepper.  Saute until tender then season vegetables with a sprinkle of salt.  Next, add garlic, 1/4 tbs. cayenne pepper, crab meat, and bread crumbs.  Stir stuffing until mixed thoroughly, add a little more salt if necessary.  At this point, if stuffing looks dry you can add a little water.  Next, butterfly jumbo shrimp by cutting each shrimp from the top but not all the way through.  Next put 1 its. of stuffing mix over the center of each shrimp.  Lastly, drizzle a little melted butter and grated Parmesan cheese and bake at 400 degrees for 15-20 minutes until shrimp is done.
