Ingredients:
- 2-8oz Tuna Steks
- ¼ cup blackened seasoning(recipe to follow)
- 1 cup diced tomato
- ½ cup diced yellow onion
- ¼ cup chopped cilantro
- 2 cloves chopped garlic
- 1 half of a jalapeno chopped
- salt to taste
Method:
In a medium size mixing bowl add the onion, tomato, cilantro,
garlic, jalapeno, and salt to taste. Set a side. Heat a 12" cast iron skillet
on med-high heat. While the skillet is heating up coat each side of the yellow
fin tuna with the blackened seasoning. When the pan has turned gray and smoking
hot add a tablespoon of butter in the center of the pan. The butter should melt
instantly and start smoking. Add the
yellow fin tuna to the center of the pan and cook around 1 1/2 minutes on each
side. Once tuna is cooked, remove and place to a center of a plate. Next top
with the jalapeno salsa and serve.
Blackened seasoning:
- 1 tbs. paprika
- 4 tsp. dried thyme
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. salt
- 1 tsp. cayenne
- 1 tsp. black pepper
- 1 tsp. dried oregano
- ¾ tsp. cumin
