Tuna Steak in Mustard Crust

16 oz. fresh tuna, cut into 2-8 oz pieces

4 oz. dijon mustard

1 cup seasoned bread crumbs

1 pinch cumin

1 pinch mustard seed

2 cloves garlic, minced

1 pinch thyme, chopped

1 pinch cayenne pepper

1 pinch kosher

1 pinch black pepper

Combine the seasoned breadcrumbs, cumin, mustard seed, garlic, thyme, cayenne, salt pepper in a mixing bowl. Brush the tuna slices with dijon mustard and spread the breadcrumbs over the mustard. Saute tuna in butter and oil on medium high to the desired degree of doneness.
