Ingredients
- Sweet potatoes 3
large potatoes
- Butter 5
oz
- White or yellow onion, diced 1
medium onion
- Cinnamon 1
oz
- Ground ginger (optional) 1
oz
- Brown sugar ½
c
- Salt 1
TB
- Curry powder 1
TB
- Panko bread crumbs 2
cups
- Cooking oil 1
½ cup
Method
1. Gather all ingredients
2. Put sweet potatoes on a
sheet tray and cook in oven at 375 degrees until fork tender
3. While potatoes are cooking
saute diced onions in 3 oz of butter and add curry to onions once onions are translucent, then set
aside and cool
4. Whip sweet potatoes
together in mixer with the rest of butter, cinnamon, ginger, brown sugar, salt, and curried onions
5. Portion potato mixture
into 5 oz patties about ¾ to 1 inch thick
6. Lightly bread cakes in
panko bread crumbs, and heat 1 c of oil in a saute pan on med- high heat
7. Saute croquettes in fat
for 2-3 minutes on each side until properly browned
8. Finish browned cakes on
sheet tray in 350 degree oven for 5 minutes, cool and serve
