Broccoli and Cheddar Soup

2 tbl. butter

2 tbl. flour

6 cups milk

1 1/2 broccoli, pureed

1 cup cheddar cheese, shredded

1 cup cream

Kosher salt and ground pepper

Melt butter in the top of of a double boiler set over simmering water. Blend in the flour followed by the milk. Heat uncovered, stirring frequently. Add the Broccoli and cheese; pour in cream and season with salt and pepper.
