Bruschetta Siciliani

  • 1 loaf                     Italian bread
  • .5 cup                    extra Virgin Olive Oil
  • 2 cups                   diced tomatoes
  • .5 cup                    olives cut in half
  • .5 each                  red onion
  • 24 leaves             fresh basil
  • 3 T                          red wine vinegar
  • 1 tsp                      salt
  • 1 tsp                      pepper
  • As needed          Parmesan Cheese

 

Method

Bake bread and let cool. Slice into even slices and brush with olive oil on each side. Place on the grill until toasted.

In a mixing bowl marry remaining ingredients including olive oil. Let rest to meld flavors. Place sliced bread on plate and finish with topping and shredded cheese.
