Cranberry Port Relish

Chef William's Cranberry Port Relish


3 cups cranberries (12 oz.)

1 medium onion

1/3 cup Cider Vinegar

1/2 cup Orange Juice

1/2 cup walnuts

1/2 cup of pineapples tidbits

1 cup golden raisins

1 cup of sugar

1.5 cups Duplin Port Wine

1/2 tsp. ground nutmeg

1 tsp. ground ginger

1 tsp. ground cinnamon

1 grated orange rind

Combine all ingredients except cranberries in heavy saucepan. Bring to a boil and let simmer for 15 minutes. Add cranberries and simmer until the berries "pop". Towards the end the relish gets thick. Make sure to stir often, since it will stick to the pan.
